  • 4 cups powdered sugar
  • 23 tbsp milk
  • Fresh raspberries
  • White chocolate curls or shavings

Instructions

  1. Preheat the oven to 350°F and prepare three 8-inch round cake pans by greasing and flouring them.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy; add eggs one at a time, then vanilla extract and melted white chocolate.
  3. Gradually mix in the dry ingredients with whole milk until just combined.
  4. Divide the batter among the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks.
  5. For the raspberry filling, cook raspberries with sugar and lemon juice over medium heat until softened; add cornstarch slurry to thicken.
  6. For the frosting, beat butter until creamy, then gradually mix in powdered sugar, melted white chocolate, and enough milk to reach desired consistency.
  7. Assemble the cake by layering frosting and raspberry filling between cooled cake layers; frost the outside as desired.
