  • 2 tablespoons oil (or water for oil-free)
  • 9 oz (255 grams) vegan beef or portobello mushrooms
  • 1 large onion, diced
  • 3 large carrots, cut into chunks
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 4 tablespoons all-purpose flour (or cornstarch)
  • 1 medium rutabaga/swede, cut into chunks
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • 4 cups vegetable stock
  • ¼ cup soy sauce (or Tamari)
  • 2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon white or cane sugar
  • 2 large bay leaves
  • 2 x 4 inch sprigs fresh thyme
  • 2 x 4 inch sprigs fresh rosemary

Instructions

  1. In a large pot over high heat, add oil. Sear the vegan beef or mushrooms until golden brown; remove and set aside.
  2. Lower heat to medium. In the same pot, add onions, carrots, and celery. Sauté until softened.
  3. Add minced garlic and cook for about 30 seconds. Stir in flour (or cornstarch) to create a roux.
  4. Gradually incorporate vegetable stock while stirring to dissolve lumps.
  5. Add rutabaga/swede, potatoes, cabbage, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary; stir well.
  6. Bring to a boil then reduce heat to simmer uncovered for about 45–50 minutes until potatoes are soft and gravy thickens.
  7. Return seared protein to the pot during the last ten minutes of cooking.
