  • 1 ½ cups fresh breadcrumbs
  • 1 ½ pounds ground turkey
  • ½ cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 tablespoons olive oil

  • 1 ¾ cups chicken broth
  • ½ cup grated parmesan cheese
  • Fresh sage

Instructions

  1. Preheat the oven to 375°F (190°C).

  3. Mix in minced onion, garlic, sage, parsley, Italian seasoning, parmesan cheese, and eggs until just combined.
  4. Gently fold in ground turkey along with salt and pepper; form into meatballs.
  5. Chill meatballs in the freezer for about 20 minutes.
  6. Sear meatballs in a skillet with olive oil until browned on all sides.
  7. In the same skillet, sauté minced onion and garlic; stir in pumpkin puree and chicken stock.
  8. Simmer the sauce before adding parmesan cheese and sage; return meatballs to the skillet to warm through.
