Ingredients

Scale
  • 2 lbs beef (sirloin or flank steak)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp dried rosemary or thyme

  1. In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, black pepper, and salt to create the marinade. Coat the beef well and let it marinate for at least one hour (overnight for best results).
  2. Preheat your oven to 400°F (200°C). Toss halved baby potatoes with olive oil, dried rosemary (or thyme), salt, and pepper until evenly coated.
  3. Spread the marinated beef on a baking sheet and arrange the seasoned potatoes around it. Roast for 30-35 minutes, stirring halfway through.
  4. Allow the beef to rest for 5-10 minutes before slicing. Serve with roasted potatoes.
