  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix olive oil, salt, pepper, garlic powder, dried thyme, and paprika in a bowl.
  3. Rub the mixture over each Cornish game hen, ensuring even coverage.
  4. In another bowl, combine bread crumbs, chopped onion, celery, carrots, parsley, chicken broth, and melted butter until well mixed.
  5. Stuff each hen with the prepared mixture without overfilling.
  6. Place hens in a roasting pan and baste with white grape or apple juice.
  7. Roast for about 1 hour and 10 minutes or until internal temperature reaches 165°F (75°C). Let rest before serving.
