  • 4 Large Bell Peppers
  • 1 tbsp Olive Oil
  • 1 medium Yellow Onion (finely chopped)
  • 34 cloves Garlic (minced)
  • 10 oz Frozen Chopped Spinach (thawed and squeezed dry)
  • 15 oz Whole Milk Ricotta Cheese
  • 1 Large Egg (lightly beaten)
  • ½ cup Grated Parmesan Cheese
  • ¼ cup Plain Breadcrumbs (optional)
  • 1 tsp Dried Italian Seasoning
  • Salt and Black Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds; place upright in a baking dish.
  3. In a skillet, heat olive oil over medium heat; sauté onion until translucent, then add garlic and cook until fragrant.
  4. In a bowl, mix thawed spinach, ricotta cheese, beaten egg, Parmesan cheese, breadcrumbs (if using), Italian seasoning, salt, and pepper until well combined.
  5. Stuff each pepper with the filling and sprinkle extra Parmesan cheese on top.
  6. Cover the baking dish with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden brown.
  7. Let cool slightly before serving.
