  • 3/4 cup Dutch-process cocoa powder
  • 1 1/2 teaspoons baking powder
  • 3 large eggs or chia eggs
  • 1 1/2 cups milk
  • 3/4 cup olive oil
  • 24 ounces full-fat cream cheese
  • 2 cups mini vegan marshmallows
  • Orange gel food coloring

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a large bowl, whisk together sugar, flour, cocoa powders, baking powder, and salt.
  3. In another bowl, mix eggs (or chia eggs), milk, oil, and vanilla extract until combined.
  4. Gradually add wet ingredients to dry ingredients; mix until smooth.
  5. Stir in boiling water until well blended. Pour batter into prepared pans.
  6. Bake for about 24 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  7. For frosting: Beat cream cheese and butter until fluffy; gradually add powdered sugar and vanilla.
  8. Once cooled completely, frost the first layer; place the second layer on top and frost the entire cake.
  9. Use orange gel food coloring to create a spiderweb design on top with piping or a toothpick.
  10. Decorate with mini vegan marshmallows and plastic spiders.
