  • 3.4 ounces pumpkin spice instant pudding mix
  • 1 cup sour cream
  • 4 large eggs
  • 1/2 cup water
  • 1/2 cup oil (canola or vegetable)
  • 1 1/2 cups mini chocolate chips
  • 16 ounces cream cheese (softened)
  • 1/2 cup butter (softened)
  • 1/3 cup dark cocoa
  • 34 cups powdered sugar
  • 2 teaspoons vanilla extract
  • black food coloring
  • 2 red hots

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a large bowl, combine the spice cake mix, pumpkin spice pudding mix, sour cream, eggs, water, and oil. Mix until well combined and fold in mini chocolate chips.
  3. Pour the batter into a greased bundt pan and bake for 45-50 minutes or until a toothpick comes out clean.
  4. Let the cake cool for about 20 minutes before transferring it to the refrigerator for at least 1-2 hours.
  5. For the frosting, beat together softened cream cheese and butter until smooth. Gradually add dark cocoa and powdered sugar until desired sweetness is reached. Mix in vanilla extract and black food coloring.
  6. Frost the cooled cake and decorate it with red hots for eyes.
