  • 4 tbsp avocado oil or olive oil
  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 (13.5-ounce) can full-fat coconut milk
  • 1 (14-ounce) can crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt, use more as needed
  • 1 tsp freshly cracked black pepper
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro, roughly chopped

Instructions

  1. Rinse and soak lentils in cold water for at least 6 hours.
  2. Heat avocado oil in a large skillet over medium-high heat; sauté garlic, ginger, and serrano peppers for about 3 minutes until fragrant.
  3. Stir in spices (cumin, cayenne pepper, coriander, curry powder, garam masala, turmeric, salt, black pepper) and cook for an additional minute until aromatic.
  4. Add soaked lentils along with crushed tomatoes and coconut milk; mix well.
  5. Lower the heat and partially cover the skillet; simmer for 20-25 minutes until lentils are tender.
  6. Stir in lemon juice and chopped cilantro before serving.
