  • 3 tbsp toasted sesame oil
  • 3.5 ounces shiitake mushrooms
  • 4 garlic cloves
  • 1 tbsp grated ginger
  • 4 cups chicken or vegetable broth
  • ½ tsp ground turmeric
  • 2 tbsp low sodium soy sauce
  • 2 tbsp Thai red curry paste
  • 1 can (14 oz) unsweetened coconut milk
  • 9 ounces instant ramen noodles

Instructions

  1. Heat 1 tablespoon of sesame oil in a large pot over medium heat. Sauté the torn shiitake mushrooms until browned; set aside.
  2. In the same pot, lower the heat and add another tablespoon of sesame oil along with grated garlic and ginger. Sauté until fragrant.
  3. Add chicken broth, turmeric, soy sauce, red curry paste, coconut milk, and bring to a boil.
  4. Cook instant ramen noodles in the broth for about two minutes until tender.
  5. Serve topped with sautéed mushrooms and your choice of garnishes like sesame seeds or chili oil.
