  • 4 large organic sweet potatoes, peeled + cubed
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube sweet potatoes, then toss them in olive oil, cinnamon, and nutmeg.
  2. Roast sweet potatoes for about 30 minutes until tender.
  3. In a bowl, mash roasted sweet potatoes with almond milk, vanilla extract, butter, brown sugar, and maple syrup until smooth.
  4. Layer half the mixture in a greased baking dish; add half of the raisins and vegan marshmallows. Repeat layers.
  5. Bake at 350°F (175°C) for about 30 minutes until bubbly and golden.
