  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (each 125g), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons basil pesto
  • Butter, as required

Instructions

  1. Prepare your ingredients by slicing the mozzarella and chopping the sun-dried tomatoes.
  2. Assemble the sandwich by spreading pesto on one side of each slice of sourdough bread. Layer one slice with mozzarella and sun-dried tomatoes before topping it with the other slice.
  3. Spread butter on the outside of both slices for that golden-brown crust.
  4. Heat a skillet over medium heat and grill the sandwich until golden brown on one side (about 3-4 minutes). Carefully flip to grill the other side until crispy and melted.
