  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Prepare asparagus, bell pepper, and snap peas. Mince garlic and ginger.
  3. In a bowl, mix soy sauce with cornstarch and set aside.
  4. Heat oil in a large skillet over medium-high heat.
  5. Sauté garlic and ginger for about 30 seconds until fragrant.
  6. Add the shrimp in a single layer; cook for 2-3 minutes until pink. Remove from pan.
  7. Stir-fry asparagus and bell pepper for 2-3 minutes until tender-crisp.
  8. Incorporate snap peas and stir-fry for another minute.
  9. Return shrimp to the pan; pour sauce over all ingredients. Stir well to combine.
  10. Cook for an additional minute until the sauce thickens slightly.
  11. Serve hot over rice or noodles.
