  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8.5 ounces corn muffin mix

Instructions

  1. Preheat your oven to 350°F (175°C). Grate zucchini and drain it well using a clean kitchen towel.
  2. In a skillet over medium heat, sauté the onion and jalapeño until softened.
  3. In a large bowl, combine grated zucchini, sautéed onion mixture, half of the cheddar cheese, corn kernels, eggs, garlic powder, cumin, salt, black pepper, and corn muffin mix. Stir gently until well mixed.
