  • ½ pound ground Italian sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F. Cut the acorn squash in half and scoop out the seeds.
  2. Place the squash cut side down on a lined baking sheet and bake for about 20 minutes until fork-tender.
  3. In a skillet, cook the ground Italian sausage over medium heat until browned; set aside.
  4. Sauté onions in olive oil until softened, then add kale, garlic, celery, apples, and herbs; cook until combined.
  5. Mix in the cooked sausage and some scooped-out squash flesh for added creaminess.
  6. Fill each half of the acorn squash generously with the stuffing mixture.
  7. Return to the oven for another 15 minutes; top with feta cheese and nuts before serving.
