  • 1 pound ground turkey or chicken
  • 5 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 21/4 cups mirepoix (diced carrots, celery, onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk
  • 1/2 cup heavy cream
  • 2 cups shredded extra-sharp Cheddar cheese
  • 1 teaspoon minced garlic
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Brown the ground turkey or chicken in a large pot over medium-high heat until deeply browned. Remove and set aside.
  2. In the same pot, melt one tablespoon of butter and sauté mirepoix for 5–7 minutes until softened. Add minced garlic towards the end.
  3. Stir in chopped potatoes, dried herbs, salt, and pepper. Pour in chicken stock; bring to a boil then reduce heat to simmer for about 15–20 minutes until potatoes are fork-tender.
  4. Meanwhile, prepare the creamy base by melting four tablespoons of butter in another pot. Whisk in flour for one minute then gradually add milk until thickened. Stir in heavy cream.
  5. Combine the creamy mixture with the potato soup once cooked. Add back the ground turkey or chicken and mix in shredded cheese until melted.
  6. Serve warm with hearty buttered bread.
