  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh thyme (minced)
  • 1 tsp Kosher salt
  • 1/2 tsp ground black pepper
  • 1 can (28 oz) San Marzano tomatoes (crushed)
  • 1 cup fresh basil (roughly chopped)
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat your oven to 375°F. Place halved Roma tomatoes on a baking sheet and drizzle with olive oil, salt, and pepper. Roast for about an hour until tender.
  2. In a large pot over medium heat, melt butter or olive oil. Sauté diced onion until soft and translucent, about 5 minutes.
  3. Add minced garlic, thyme, salt, and pepper; sauté for another minute.
  4. Stir in crushed San Marzano tomatoes, chopped basil, and sugar; let simmer for about 10 minutes.
  5. Add roasted tomatoes and chicken stock to the pot; simmer for another 30 minutes.
  6. Use an immersion blender to purée the soup until smooth.
  7. Stir in heavy cream before serving.
