  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • Fresh ground pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until golden and soft.
  2. In a large pot, cover potatoes with cold water, add salt, and boil until fork-tender (about 15 minutes). Drain the potatoes.
  3. Squeeze roasted garlic cloves into the potatoes.
  4. Warm half and half and butter together until melted, then pour over the potatoes. Mash until combined; season with salt and pepper to taste.
  5. Serve warm, garnished with fresh herbs or extra butter if desired.
