  • 2 tsp chili crisp
  • 1/2 inch piece ginger, grated
  • Salt and pepper, to taste
  • 1/2 cup chopped sugar snap peas
  • 2 green onions, sliced
  • Toasted sesame seeds, garnish

Instructions

  1. In a bowl, whisk together dressing ingredients: sesame oil, peanut butter (or tahini), soy sauce (or tamari), rice vinegar, lime juice, honey, chili crisp, grated ginger, salt, and pepper.
  2. In a skillet over medium heat, sauté cooked jasmine rice with sesame oil and chili crisp until golden and crispy (about 5-7 minutes).
  3. In a large bowl, mix shredded cabbage, cucumber, bell pepper, grated carrot, sugar snap peas, and green onions.
  4. Pour dressing over veggies and toss gently; add crispy rice last to maintain crunch.
  5. Serve immediately topped with toasted sesame seeds.
