  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (for glaze)
  • 2 tablespoons maple syrup (for glaze)

Instructions

  1. Preheat your oven to 175°C (347°F). Lightly grease a small springform pan (20–22 cm) and dust it with flour.
  2. In a large mixing bowl, beat together the eggs and brown sugar until fluffy.
  3. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually add to the wet mixture, stirring until just combined.
  5. Pour batter into the prepared pan and bake for about 25 minutes. Cover loosely with foil and bake for an additional 20 minutes. Use a toothpick to check for doneness.
  6. Allow kuchen to cool completely before glazing with a mixture of powdered sugar, milk, and maple syrup.
