  • 2 cups all-purpose flour
  • 1 ½ cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking dish by greasing or lining it with parchment paper.
  2. In a bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until well mixed.
  3. Press two-thirds of the crumble mixture into the bottom of the prepared baking dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle remaining crumble mixture on top and bake for about 30-35 minutes until golden brown.
  7. Allow to cool completely before slicing into bars.
