  • 1 1/2 cups pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup milk
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 8 ounces cream cheese, softened
  • 3/4 cup heavy cream
  • maple syrup to taste

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together vegetable oil and both sugars until smooth.
  2. Mix in pumpkin puree, vanilla extract, eggs, and milk until just combined.
  3. Gradually add flour, baking soda, cinnamon, cloves, and salt; stir until blended without overmixing.
  4. Pour the batter into greased muffin tins about three-quarters full.
  5. Bake for 20-24 minutes or until tops spring back when gently pressed. Let them cool completely before filling.
  6. For the filling, whip heavy cream until stiff peaks form. In another bowl, beat the cream cheese until smooth; fold in whipped cream and maple syrup.
  7. Cut a cone from each muffin’s center and fill generously with the cream cheese mixture.
