  • 2 cups whole milk
  • 4 eggs (yolks separated from whites)
  • Pinch of cream of tartar
  • 1 1/2 cups confectioner’s sugar

  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree (not filling)
  • 1 cup all-purpose flour

Instructions

  1. Preheat oven to 325°F (160°C) and line an 8×8 or 9×9 inch baking dish with parchment paper.
  2. Warm the milk until lukewarm.
  3. Beat egg whites with cream of tartar until stiff peaks form; set aside.
  4. Melt butter and let cool. In a separate bowl, beat egg yolks with confectioner’s sugar until pale. Mix in vanilla, spices, and melted butter.
  5. Combine flour, then gently fold in pumpkin puree and 1/4 cup lukewarm milk.
  6. Gradually add remaining milk while mixing on low speed; fold in egg whites.
  7. Pour batter into the prepared dish and bake for 60-65 minutes until golden brown.
  8. Cool completely before refrigerating for at least two hours before serving.
