  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, combine the eggs, pumpkin puree, both sugars, and vegetable oil until smooth.
  4. Add the wet mixture to the dry ingredients and mix gently until just combined.
  5. Fold in the chocolate chips.
  6. Scoop the batter into greased or lined mini muffin tins and bake for about 16 minutes or until a toothpick comes out clean.
  7. Allow cooling for about 3 minutes before transferring to wire racks.
