  • 1 lb frozen vegan gyoza dumplings
  • 1 lb heirloom tomatoes (mixed colors)
  • 1 English cucumber (or 4 Persian cucumbers)
  • 5 scallions (thinly sliced)
  • 1 red chili pepper (optional)
  • 1/2 cup basil leaves
  • 3 Tbsp low sodium Tamari
  • 2 Tbsp balsamic vinegar
  • 23 tsp maple syrup
  • Optional: sesame seeds or crispy fried onions for garnish

Instructions

  1. Steam the frozen dumplings according to package instructions. Transfer them to a large bowl and toss with a teaspoon of sesame oil or water.
  2. In another bowl, whisk together Tamari, balsamic vinegar, and maple syrup. Pour over warm dumplings and toss until well coated.
  3. Chop heirloom tomatoes into wedges, slice cucumber and scallions, and add to the bowl with dumplings. Mix in optional chili pepper for heat.
  4. Tear basil leaves over the salad and sprinkle with sesame seeds or crispy onions. Serve at room temperature.
  5. Customize by adding more veggies like cabbage or edamame, and drizzle with garlic chili sauce for extra flavor.
