  • 2 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • ½ cup dry white grape juice
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 4 cloves garlic (minced)
  • 6 cups chicken broth
  • 2 cups fresh spinach
  • Juice of 1 lemon (about 3 tablespoons)
  • ¾ cup orzo (uncooked)

Instructions

  1. Heat olive oil over medium-high heat. Season chicken with lemon pepper seasoning; sear each side for about 3–4 minutes until golden brown. Remove and dice.
  2. In the same pot, add grape juice and scrape the bottom to deglaze; simmer until reduced by half.
  3. Add butter, onion, carrots, and celery; soften for about 5 minutes.
  4. Stir in garlic and seasonings, cooking until fragrant for about one minute.
  5. Pour in chicken broth along with hot sauce; bring to a boil then reduce to simmer.
  6. Add diced chicken back into the pot; cook until thorough.
  7. Cook orzo separately per package instructions until al dente; drain.
  8. Reduce heat, stir in heavy cream gradually with Parmesan cheese until creamy.
  9. Add fresh spinach; let it wilt for about 2–3 minutes.
  10. Stir in lemon juice just before serving.
