  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados (chopped)
  • 1 cup cherry tomatoes (quartered)
  • Fresh corn from 1 ear (kernels)
  • 1/3 cup red onion (finely chopped)
  • 1/2 red bell pepper (chopped)
  • 1 jalapeño pepper (diced)
  • 2 tablespoons cilantro (finely chopped)
  • 1 garlic clove (minced)
  • 2 tablespoons lime juice (for salsa)
  • 1/4 teaspoon ground cumin (for salsa)
  • Salt to taste (about 1/4 teaspoon)
  • Pepper to taste (about 1/8 teaspoon)

Instructions

  1. In a bowl, whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, paprika, onion powder, garlic powder, chipotle chili powder (if desired), and pepper.
  2. Marinate the chicken in the mixture for at least 30 minutes.
  3. Heat a grill pan over medium-high heat and cook the marinated chicken for about 5-7 minutes on each side until cooked through.
