  • 1/4 cup olive oil
  • 2 tablespoons apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (to taste)
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese

Instructions

  1. In a medium bowl, whisk together honey, olive oil, apple vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper to create the marinade.
  2. Place chicken in a resealable bag or shallow dish and coat with marinade. Seal or cover and let marinate for at least 30 minutes (up to 4 hours).
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade and let excess drip off.
  4. In a small bowl, mix crumbled feta with a drizzle of olive oil; season with salt and pepper.
  5. Arrange chicken in a baking dish and top with feta mixture. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and feta is bubbly.
