  • 2 tablespoons honey (orange blossom preferred)
  • 1/8 teaspoon ground cinnamon
  • Salt and pepper (to taste)
  • Burrata cheese (pinched into small pieces)
  • 1 pomegranate (arils removed)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In a small pan, melt the butter, then stir in honey and cinnamon.
  3. Toss the peeled rainbow carrots in the butter mixture until coated, then place them in a single layer on a baking sheet.
