  • 1/2 cup butter, softened

  • 1 cup diced peaches (fresh or canned)

  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream the butter, sugar, and honey until fluffy.
  3. Add eggs one at a time followed by vanilla extract.
  4. Alternate adding dry ingredients and milk until just combined. Fold in diced peaches carefully.
  5. Fill muffin cups two-thirds full and bake for 18-22 minutes until a toothpick comes out clean.
  6. Allow cooling completely before frosting with a mixture of cream cheese, butter, honey, and powdered sugar.
