  • 1/2 cup butter, softened
  • 1/2 cup sugar

  • 1 cup diced peaches (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter, sugar, and honey until light and fluffy.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. Alternate adding dry ingredients and milk to the wet mixture until combined.
  6. Gently fold in diced peaches.
  7. Fill cupcake liners two-thirds full with batter and bake for 18-22 minutes until a toothpick comes out clean.
  8. Allow cupcakes to cool completely before frosting.
  9. While cupcakes cool, beat together cream cheese and butter until smooth, then mix in honey and vanilla before gradually adding powdered sugar until fluffy.
  10. Frost cooled cupcakes and optionally garnish with peach slices or honey drizzle.
