1 Tbsp. olive oil
1 medium yellow onion, diced
4 tsp. garlic, minced
1 lb. ground turkey
1 Tbsp. brown sugar
2 Tbsp. chili powder
1 Tbsp. ground cumin
1 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. black pepper
1/4 cup tomato paste
4 cups beef broth (or vegetable broth for a lighter option)
28 ounce can of fire roasted crushed tomatoes
15 ounce can of kidney beans, rinsed and drained
15 ounce can of black beans, rinsed and drained
15 ounce can of pinto beans, rinsed and drained
sour cream (optional topping)
jalapenos, sliced (optional topping)
shredded cheddar cheese (optional topping)
lime wedges (for serving)
Instructions
Heat olive oil in a Dutch oven or large pot over medium-high heat. Add the diced onions and garlic and cook for about 3–4 minutes until the onions soften and become fragrant.
Add the ground turkey to the pot and stir until it's crumbled. Cook it through for about 5–7 minutes until no pink remains.
Add brown sugar, chili powder, cumin, oregano, salt, pepper, and tomato paste into the mixture. Stir everything together until combined. Then pour in the beef broth and fire-roasted crushed tomatoes along with all the beans.
Cover your pot and bring the chili to a boil while stirring occasionally. Once boiling, reduce the heat to low but keep it uncovered as it simmers for about 30 minutes.
