  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for topping)
  • Flaky sea salt (optional)

Instructions

  1. In a bowl, mix almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until combined. Fold in chocolate chips.
  2. Line a cutting board with parchment paper. Spread the cookie dough mixture into an even layer about 1/2-inch thick.
  3. In a small bowl, combine remaining chocolate chips with coconut oil. Microwave until fully melted. Pour over the cookie dough layer and spread evenly. Sprinkle flaky salt if desired.
