  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 2 tablespoons coarse sugar (for sprinkling)
  • Mini chocolate chips or black decorating gel (for eyes)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla. Cook over medium heat until thickened (about 5 minutes). Allow to cool slightly.
  3. Roll out pie crusts on a floured surface and cut out ghost shapes using a cookie cutter.
  4. Place half the shapes on the baking sheet. Spoon blueberry filling onto each piece, then top with another ghost shape and seal edges well.
  5. Brush tops with beaten egg, sprinkle coarse sugar, and decorate with mini chocolate chips for eyes.
  6. Bake for about 18-20 minutes until golden brown. Let cool before serving.
