  • ½ tbsp rosemary, minced
  • 1 tsp fresh ginger, grated
  • 34 cups vegetable broth
  • Black pepper to taste
  • Fresh parsley
  • Toasted pepitas
  • Crusty bread

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, salt, and pepper; sauté until soft (5-8 minutes).
  2. Incorporate cubed butternut squash; cook until lightly browned (8–10 minutes).
  3. Add garlic, sage, rosemary, and ginger; cook until fragrant (30–60 seconds).
  4. Pour in vegetable broth and bring to a boil; reduce heat and simmer covered until squash is tender (about 25 minutes).
  5. Allow to cool slightly before blending until smooth. Adjust consistency as desired with additional broth.
