  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup Reese's Pieces

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, powdered sugar, and vanilla extract until smooth. Scoop dollops onto a parchment-lined baking sheet and freeze for at least one hour.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar until fluffy. Add the egg and mix in additional vanilla.
  3. In another bowl, whisk together flour, baking soda, and salt; gradually add to the wet mixture while stirring gently. Fold in chocolate chips and Reese's Pieces.
  4. Flatten about two tablespoons of cookie dough in your palm, place a piece of frozen cheesecake filling in the center, and cover with more dough; seal edges well.
  5. Bake on a parchment-lined baking sheet at 350°F (175°C) for about 12–14 minutes until golden brown around the edges. Allow cooling slightly before enjoying.
