  • 16 ounces small button mushrooms
  • 2 tablespoons olive oil
  • 4 cloves garlic (chopped or crushed)
  • 1 medium onion (minced)
  • 1/2 cup chicken stock or white grape juice
  • Zest from 1 medium lemon
  • 1 tablespoon lemon juice
  • 1/2 teaspoon chili flakes (or to taste)
  • 4 tablespoons butter (divided)
  • 2 tablespoons chopped parsley
  • Kosher salt or sea salt (to taste)
  • Fresh cracked black pepper (to taste)

Instructions

  1. Clean the mushrooms by brushing them gently and trimming any dried-out stems.
  2. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and sauté until browned, about 3-5 minutes.
  3. Add 2 tablespoons of butter, minced onions, and chopped garlic to the skillet. Cook until caramelized, about another 3-5 minutes.
  4. Pour in chicken stock or white grape juice, along with lemon zest, lemon juice, and chili flakes. Cook for about 2 minutes until slightly reduced.
  5. Stir in the remaining butter and chopped parsley; season with salt and pepper to taste before serving warm.
