Instructions

  1. Preheat your oven to 350°F (175°C). Toast pecans on a baking sheet for 5-7 minutes until fragrant.
  2. In a bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add one egg and vanilla extract; mix until combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
  5. Fold in cooled toasted pecans gently.
  6. Scoop tablespoon-sized portions onto a parchment-lined baking sheet. Bake for 10-12 minutes until edges are golden brown.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
