Ingredients

Scale
  • Pâte Sucrée dough (sweet shortcrust pastry)
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the Tartlet Shells: Cut Pâte Sucrée dough into 12 portions, press into tartlet pans, and freeze for 15-30 minutes.
  2. Bake the Shells: Preheat the oven to 375°F. Prick shells with a fork, line with parchment paper and weights, then bake for 10-15 minutes until golden brown. Cool completely before removing from pans.
  3. Make the Strawberry Jam: Cook chopped strawberries with sugar over medium heat for about 5 minutes, then simmer uncovered until thickened (around 20 minutes). Let cool.
  4. Prepare the Pastry Cream: Simmer sweetened condensed milk, whole milk, and heavy cream in a saucepan. Whisk egg yolks with cornstarch; temper with hot liquid. Stir back into saucepan until thickened (5-8 minutes) and chill in the refrigerator for two hours.
  5. Assemble Your Tartlets: Spread strawberry jam in each shell, pipe in pastry cream, and top with fresh strawberries.
