  • 2½ tablespoons salted butter
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 pounds yellow onion, halved and thinly sliced
  • 1½ tablespoons thyme, finely chopped
  • 6 cloves garlic, minced
  • ½ cup dry white grape juice
  • 2½ teaspoons dijon mustard
  • 2½ tablespoons all-purpose flour
  • 1 teaspoon worcestershire sauce
  • 1 large bay leaf
  • 2½ cups beef stock (low sodium)
  • 24 ounces gnocchi (store-bought)
  • 1½ cups gruyere cheese, freshly grated
  • ½ cup parmesan cheese, freshly grated

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat. Add thinly sliced onions and caramelize for 45-60 minutes until golden brown.
  2. Stir in fresh thyme and minced garlic; cook for 2 minutes until fragrant.
  3. Pour in dry white grape juice and reduce by half (3-4 minutes). Then, add flour and cook until slightly thickened.
  4. Stir in low sodium beef stock and bay leaf; bring to a boil then simmer for 6-7 minutes, seasoning with salt and pepper.
  5. Cook gnocchi in boiling salted water until they float (2-3 minutes). Drain and combine with the sauce.
  6. Top with grated Parmesan followed by Gruyere cheese. Broil for 3-5 minutes until bubbly and golden brown.
  7. Serve hot, garnished with fresh thyme.
