  • 2 tablespoons olive oil
  • 4 cups fresh spinach
  • 4 ounces feta cheese, crumbled
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Cook the gnocchi in boiling salted water until they float (about 2-3 minutes). Drain.
  2. Heat olive oil in a large frying pan over medium-high heat. Add the gnocchi and cook undisturbed for 2-3 minutes until golden brown.
  3. Stir gently and cook for an additional 2-3 minutes until crispy on all sides.
  4. Lower heat to medium; add minced garlic and sauté for about a minute.
  5. Fold in spinach; cook until wilted (about 2-3 minutes).
  6. Season with salt, pepper, and optional red pepper flakes.
  7. Stir in crumbled feta just before serving.
