  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
  3. Layer half of the potato slices in a greased baking dish; drizzle half of the balsamic mixture over them.
  4. Repeat with remaining potato slices and drizzle the rest of the mixture on top.
  5. Cover with foil and bake for 45 minutes to soften potatoes.
  6. Remove foil; sprinkle Parmesan cheese if using and bake uncovered for an additional 15-20 minutes until golden brown.
  7. Allow to cool briefly before slicing; serve warm.
