  • 6 slices turkey bacon, chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the baby potatoes thoroughly, then cut them in half.
  3. In a large bowl, combine halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat.
  4. Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer.
  5. Evenly scatter chopped turkey bacon over the top of the potatoes.
  6. Roast in the oven for 30-35 minutes, flipping halfway through for even cooking.
  7. In the last five minutes of roasting, drizzle honey over the potatoes.
  8. Remove from oven and let cool slightly before garnishing with fresh parsley and serving.
