  • 1 pound potato gnocchi
  • 3 cups baby spinach

Instructions

  1. Prepare all ingredients by chopping vegetables and mincing garlic.
  2. In the slow cooker, combine chicken, carrots, celery, onion, garlic, Italian seasoning, salt, and pepper.
  3. Pour chicken stock over the mixture and stir gently.
  4. Cook on low for 6–8 hours or high for about 4 hours until chicken is tender.
  5. Shred the chicken in the pot using two forks.
  6. Whisk together cream and cornstarch; pour into the slow cooker with gnocchi and spinach. Stir well.
  7. Cook on high for another 30–45 minutes until gnocchi is tender.
  8. Adjust seasoning to taste before serving.
