  • 1 can (15 oz) white beans, rinsed and drained
  • â…“ cup red onion, finely diced
  • ½ cucumber, chopped
  • ½ cup fresh cilantro
  • Juice and zest of two limes
  • ¼ cup plant-based yogurt or olive oil
  • 12 cloves garlic
  • 1 tbsp maple syrup

Instructions

  1. Cook the quinoa according to package instructions (about 15 minutes), then let cool.
  2. Blend cilantro, scallion, garlic, plant-based yogurt (or olive oil), lime juice and zest, and maple syrup until smooth for the dressing.
  3. In a large bowl, combine cooled quinoa with white beans, red onion, and cucumber.
