  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, cold and cubed
  • 100g dark chocolate (at least 60%), chopped
  • 1 cup shelled unsalted pistachios
  • 1/2 cup heavy cream (divided)
  • 3 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • Optional garnishes: chopped roasted pistachios

Instructions

  1. Prepare the tart shell by mixing flour, cocoa powder, powdered sugar, and salt; add cold butter until crumbly. Mix in egg yolk and milk to form a dough. Chill for 30 minutes.
  2. Blind bake the shell at 350°F for 25 minutes total.
  3. For the bottom ganache layer, heat cream and pour over chopped chocolate; mix until smooth and pour into cooled shell. Chill for 30 minutes.
  4. Blend pistachios with milk; cook with cream, sugar, and cornstarch until thickened. Cool slightly before spreading on top of ganache layer; chill again for about 30 minutes.
  5. Prepare top ganache by heating cream and mixing it with chocolate and butter until smooth; pour over pistachio layer.
  6. Garnish with roasted pistachios and chill for at least an hour before serving.
