  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, milk, sour cream, oil, vanilla, and dissolved espresso until smooth. Combine both mixtures until well blended.
  4. Divide batter evenly between prepared pans and bake for about 35 minutes or until a toothpick comes out clean. Allow cooling completely.
  5. For the mousse: Heat 1 cup of heavy cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch; gradually add warm cream while whisking. Return mixture to heat until thickened.
  6. Divide custard into two bowls; stir in melted dark and white chocolate respectively. Fold in whipped cream until combined for each mousse.
  7. Assemble the cake: Layer one cake round with dark mousse, then white mousse; chill after each layer. Top with second cake round and refrigerate.
  8. For the ganache: Heat cream until steaming; pour over chopped milk chocolate; stir until smooth.
  9. Pour ganache over assembled cake once slightly cooled.
