  • 1 pound boneless, skinless chicken breast or thighs
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 cucumber
  • Cherry tomatoes
  • Cooked rice, quinoa, or cauliflower rice
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh dill, chopped
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley or dill, for garnish

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, oregano, garlic, smoked paprika, salt, and pepper in a bowl. Coat the chicken well and let it marinate in the fridge for at least 15 minutes.
  2. Cook the chicken over medium heat for about 6-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
  3. Prepare the tzatziki sauce by combining Greek yogurt with grated cucumber (squeeze out excess water), olive oil, lemon juice, garlic, dill, salt, and pepper.
  4. Assemble the bowls by layering rice (or quinoa/cauliflower rice), cooked chicken slices, cherry tomatoes, cucumbers, red onion, olives, feta cheese (optional), and tzatziki sauce on top.
