  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed coffee (cooled)
  • 1 package ladyfinger cookies (about 7 oz)
  • 1 ½ cups cherry preserves
  • ½ cup fresh cherries (pitted and halved)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a large bowl, whip heavy cream until soft peaks form. Gently fold in mascarpone cheese, powdered sugar, and vanilla until smooth.
  2. In a shallow bowl, mix cooled coffee with almond extract (or extra coffee if preferred).
  3. Quickly dip each ladyfinger into the coffee mixture and layer them at the bottom of a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Add half of the cherry preserves and fresh cherries on top.
  6. Repeat layers with remaining ladyfingers, mascarpone cream, and cherry mixture.
  7. Cover and refrigerate for at least six hours or overnight to allow flavors to meld.
  8. Before serving, dust with cocoa powder and garnish with fresh cherries or chocolate shavings.
