  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 Tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoons milk

Instructions

  1. Cream together room temperature butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add eggs and vanilla extract; mix until combined.
  3. In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to the wet mixture; mix until just combined. Chill the dough for one hour.
  5. Prepare the filling by combining softened butter, brown sugar, cinnamon, and cake flour until smooth.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop portions of dough, create a well, fill with filling, seal, and shape into cookies.
  8. Bake for 11-13 minutes until set but soft in the center; cool before icing.
